Strawberries & Cream Bars

Base Ingredients

3 tbsp 365 Nourish Chocolate Magnesium Complex Powder⁠
1 cup almonds⁠
1 cup coconut⁠
3 tbsp cacao powder⁠
1 + 1/3 packed cup dates⁠

Filling Ingredients

2 cups raw cashews, soaked for 3 hours⁠
1/2 cup rice malt syrup⁠
Few drops of vanilla stevia⁠
1/3 cup coconut milk⁠
2/3 cup coconut oil⁠
1/4 tsp salt⁠
Juice of 1/2 lemon⁠
2 cups strawberries, thinly sliced⁠

Make

▪️ Make the base first by pulsing the coconut, almonds, cacao and sea salt in a food processor.⁠
▪️ Once a crumb forms, add the dates and coconut oil. Blend until a dough forms. ⁠
▪️ Press the dough evenly into a 20 x 20cm lined baking tin.⁠
▪️ Blend the cream layer by blitzing all ingredients except for the strawberries until silky smooth. Pour over the base.⁠
▪️ Evenly spread strawberries over the top.⁠
▪️ Freeze the entire slice for up to 4 hours until firm to touch.⁠
▪️ Slice into squares and serve immediately.⁠

💡 TIP: Freeze and thaw slices as needed for up to 1-2 months.⁠
