Elsa's Wholesome Life Collaboration | Superfood Peanut Butter Whoopie Pies

Ingredients
1/4 cup 365 Nourish Chocolate Greens Powder
1 cup wholemeal flour
1 tsp baking powder
Pinch of sea salt
2 TBS cacao powder
1/4 cup + 1 TBS rice malt syrup
1/4 cup + 1 tsp coconut oil
1 TBS boiling water 
 
Method
  • Preheat oven to 180 degrees Celsius, fan forced
  • Sieve all of the dry ingredients into a large mixing bowl
  • In a separate bowl, combine the wet ingredients and transfer into the large mixing bowl
  • Combine the mixture until a wet cookie batter forms
  • Roll the mixture into 8 equal sized balls and place onto a lined baking tray 4 cm apart
  • Press each ball down with a fork to a 1/2 inch thickness
  • Place the baking tray in oven and bake for 8-10 minutes
  • Remove tray from oven and allow to cool on a wire rack for 30 minutes (the cookies will harden upon cooling)
  • Grab two cookies and sandwich them with a GENEROUS tablespoon of peanut or almond butter
